If you love the classic New York Cheesecake, you’ll fall in love with its alter ego—Basque Burnt Cheesecake. On the surface, the dessert is crackly, cratered and charred. But beneath it all is a rich custardy centre that boast a sweet and somewhat tart flavour profile (the latter because of the cream cheese). For Michelle Tong, the lady owner of Gaily Bakes, she has successfully infused mochi into contemporary confectioneries. The result? A catalogue of exceedingly addictive freshly-baked goods with a soft, chewy and springy centre—just like the traditional mochi.
“I came across a Hawaii Butter Mochi—the Hawaiian descendent of the Japanese mochi, if I may—recipe and it got me intrigued by how changing a type of flour can have such a different outcome,” she says in an interview with ELLE Singapore. From mochi-infused madeleines to mochi-infused brownies, offerings from Michelle are sinfully addictive and they would make for a great party selection to have.

As the name suggests, Lookie Cookie sells cookies (and other confections, duh). Crackly on the outside and extremely fudgy on the inside, the cookies baked by owner Jessica Chow are decadent delights that will certainly wow your guests. Using only quality Valrhona chocolates, one of the best and largest chocolate producers in the world, chocolate-flavoured cookies and tarts made by Jessica boast a sublime bitterness that helps offset the sweetness of the dessert.

Mon Cerise Patisserie
Having trained and perfected her baking skills at the prestigious pastry school Le Cordon Bleu and at the 5-star Langham Hotel in London, the sweet treats by home baker Cherry Chiu is nothing short of amazing.
At Mon Cerise Patisserie, a French-inspired pastry shop, cakes baked by Cherry comprise only premium ingredients from French and in Singapore. Of her eclectic selections, she loves the Strawberry Charlotte, which boasts a fluffy Japanese sponge cake, strawberry compete, Madagascan vanilla ice-cream and more.For the coming New Year, she has also created and an indulgent chocolate cake that resembles a clock. Named “Countdown”, it features chocolate sponge, fresh raspberry cream and a Grenada origin 76% dark chocolate mousse.
